If you’ve ever ventured to Northern Africa there’s every chance you would have experienced a traditional Tagine. A Tagine in its traditional sense is basically a clay oven that cooks a stew like meal that is mouth-wateringly good
Le Creuset have recently launched their own cast iron version (the base), with a “coolie” style lid made from earthenware and having given it a whirl we think it’s pretty special… in fact it’s taken pride of place in the kitchen!
“So how does a Tagine work” I hear you say… well, steam is re-condensed into water droplets on it’s cool walls and falls back into the ingredients keeping it moist. When you cook up a stew in a traditional casserole dish there’s every chance you’ll burn something (well, I would anyway), but a Tagine basically reduces the risk of this – Oh… and it looks pretty spectacular too, a great conversation piece when popped on the table.
You can cook pretty much anything in it including meat and vegetables with small amounts of liquid. Le Creuset’s Tagine is also oven, grill, freezer and dishwasher safe and suitable for all hobs. If that isn’t enough to tempt you then there’s a lifetime guarantee on base!
